The ham carving knife par excellence!
This is a first class knife for slicing Jamon Serrano. Having received a gift of a ham for Christmas I was at a loss as to how to slice it properly. I did a little research and eventually discovered this knife. I had been told that the ham should be sliced very thinly and in short, 2 to 3 inch, pieces but that a very sharp, flexible blade was needed and great care was necessary in order to a) cut the pieces thinly enough and b) not slip with the blade and cut oneself.This knife delivers all of the requirements effortlessly! The blade is very flexible and razor sharp but is protected in a unique plastic/nylon guide that also acts as a guide and depth stop so that it is easy to slice very thin pieces.I heartily recommend this knife for anyone interested in achieving a professional job effortlessly.

Super sharp and makes thin slices
Bought this to cut up a half leg of Serrano ham I bought for Christmas. It’s impossible without a sharp enough knife so I thought I’d make the purchase.The knife is super sharp and has retained its edge well so far after a solid month.The plastic guard is perfect at helping create super thin slices.It’s light so doesn’t feel super premium and can bend quite easily. Would’ve preferred it to be sturdier but as long as you have a nice flat surface, it does the job very well.Can use this to cut all kinds of meat if you take the guard off as it’s so sharp.

Nifty bit of kit
I bought this knife a little while ago and have just bought a Serrano ham. I wasn't convinced how effective it would be, but it really is a rather clever bit of kit. The knife seems sharp enough (I haven't needed to sharpen it yet) and it works effectively on producing nice thin slices of ham. The protector, apart from the obvious safety advantage, seems to provide a good guide and makes the task easier. With a 'free-hand' knife my efforts on my last ham did improve over time, but I was not always getting the consistency I seem to be getting from this knife. I thought the price seemed a little high for a plastic handled knife, but it certainly does the job well, and there's no 'waste' because of poor cutting style. A very clever product that I enjoy using.

Ideal for safe thin cutting of Serrano Ham.
I have bought Serrano ham in the past and found it impossible or really difficult to cut thin slices with a normal kitchen knife or the poor quality knives that come with some ham stands. A friend also had a very nasty accident whilst cutting her ham and needed a trip to A&E for stitches. I have found this knife a really good addition to my kitchen. It cuts nice thin slices depending on the amount of pressure you apply when you cut. A light pressure using long cuts of the blade gives a wafer thin slice add a little more pressure and the thickness gets more. The knife most of all is safe and you cannot cut your self when using it. I feel confident enough to let my kids cut from the Serrano. As with anything it requires some practice to use but I have found I am improving and learning how to use it effectively. Some reviews have said it is hard to sharpen, once you slip off the guide/protector I sharpened it with a 'steel' with ease and achieved a nice sharp blade. I would recommend this knife.

Essential for the beginner.
Having just bought my first Jamon I was looking for a decent knife to carve it with and decided on this one for a couple of reasons. The positive reviews this has speaks volumes about how good it is and I have to agree this is really excellent. I was also concerned about buying a huge knife and the possibility of a visit to A&E. The safety feature renders the knife incapable of severing a digit (or limb) with the guard in place but does not interfere with it's intended function at all. It does a beautiful job slicing my Jamon and I feel quite safe using it. The initial apprehension I had about buying a whole Jamon and how I was to deal with it is completely gone and in future I will be very happy to do this more often. My first couple of slices were slightly too thick but after that I was carving properly partly guided by the guard to keep the knife at the correct angle. I'm no expert at this yet but have to say if you're a beginner this is the only knife you should consider, safe in inexperienced hands while being sharp enough to do a thoroughly professional job of carving Spanish ham.

Very Good once sharpened
When this first arrived I thought it was useless and was going to return it. Once sharpened though...it is an excellent knife for the money, its a pity because it should be sharp when it arrives but I would still buy this knife again because its good quality.The knife guard....don't even bother trying to slice with it on, its a gimmick, however, its a very good addition to have to protect the knife when not in use.
