Fun, fizzy, fabulous, great scoby, great instructions, great end product
First time ever trying to experiment with kombucha. It has been a great success.I love the way the instructions were written - very easy to understand - very friendly - as if a friend was chatting to you about it.The scoby seemed very generous in size and I had instant success with it, So simple.I personally used a large Kilner jam jar /storage jar to put the tea and sugar and scoby in - then covered it in a muslin cloth 29p Home and Bargainthen brought the lid of the kilner jar down to pin the cloth cover in place - BUT did not fasten the clip - just left it loose. So there was no air tight seal.I then left it on top of my dish washer in my kitchen which gets switched on once a day. This seems to be averaging temperatures of about 60-70 degrees in November and December but obviously goes up in temperature when the dishwasher is going. This seems to work perfectly. It is like drinking a mildly fruity, tangy, gently fizzy beer. I loved it! Contrary to advice on putting the finished product in the fridge - I just drink it all room temperature out of the jar and then brew another batch when I am down to having a quarter of the batch left.If you have never had fermented anything before - it will taste strange -- but if you are diverse in your eating and drinking experiences and you have some basic idea about ferments - I really think you will love this. The really fool proof instructions were a massive advantage.

The best scoby gave me the best kombucha - already bought another
When I made the mistake of getting a dehydrated, painfully emaciated scoby from Planet Organic's crappy 'kit' which was literally nothing but some rubbish instructions & aforementioned paper thin scoby, I ended up with a waste of a batch of kombucha which unsurprisingly went mouldy. When this arrived I went through the same process, with two batches on the go one day behind the other. The thick, healthy, happy scoby came flooded with loads of juice which made my first ever batch of absolutely delicious kombucha! So 2 litres disappeared within 24 hours so got to get another one as the original is being used in a new batch already.Scobys are not created equal and this big bad boy is just perfect. I have just ordered another one so I can get another batch on the go. Sure I could do the continuous method but I'd really just rather have a fresh batch each time. So happy with this company and their fabulous scobies. After having the worst experience ever with a rival company's skinny dehydrated pos, this is the best.

Very Happy with my kombucha!
I first started making kombucha in about 1991 after being given a culture by a friend. She had got hers from people in Bath, who I believe wrote one of the early books on kombucha brewing. I kept up the brewing for about 7 years until I moved to a home that needed major renovation and I didn't want to brew in such dirty, dusty conditions. In 2010 I got myself a new culture on ebay; it was a sad little thing, but I tried to nurse it back to health. It did improve, but it was never a patch on my first one. After two years I moved again and brewing ceased. Now in a new home with a recently renovated kitchen I decided to brew again. I am so glad I chose Happy Kombucha this time. The culture I was sent was a beauty and it is making wonderful kombucha tea. I've used black, green and white teas and all are equally good (white is my favourite). I also like to throw in a Whittards flavoured tea bag to some batches (kept separate from the main one) - strawberry, mango or passion fruit are beautiful. The new cultures are healthy and strong - if you can't brew good kombucha tea with this, you are doing something wrong.

Fantastic! - it's now grown a thick bigger baby on top that covers the entire surface of the tea
My SCOBY is working well. I'm using it a 5-litre continuous brewing jar, and it's now grown a thick bigger baby on top that covers the entire surface of the tea.It came in a sealed plastic bag with some starter liquid and very clear instructions which recommended sticking to 2L only for the first couple of brews, to give the SCOBY time to grow, and not make too many demands on it by giving it excessive quantities of tea to ferment.I tasted the brew daily and within 4 days or so I could tell it was working. I love drinking this stuff. I'm impatient to brew more and thought about putting two SCOBY in the jar to allow me to brew a higher quantity sooner, but am sticking with the one for now and, alongside this, and trying water kefir from the same supplier.Another point to note: the customer service is great. They have been very helpful in responding to my newbie queries and helping me to understand why my first one had gone mouldy.Highly recommended!

Very good quality scoby. Well developed and healthy. Produced good outcome in 2 litre jar and developed baby for additional brew. Well packaged with good amount of starter.

Buch-tastic!
I've well and truly joined the Kombucha train, after deciding to get brewing all I needed was a SCOBY (symbiotic culture of bacteria and yeast) to get started! My lovely Scoby came well packaged and perfectly formed (not like some of the ones i've seen online) But the do change over time, you can look forward to some tentacle-like yeast strings and lumpy bits.I brewed my tea, added sugar and placed this strange creature inside a 2.5l glass mason jar. Then voila 2 weeks later i was enjoying fine Kombucha! To anybody who is not sure, i'd say give it a go, its a bit alien at first but its so easy to make. It's also the gift that keeps on giving as you can reuse it each time to make more. I'm on my 4th batch now and have even started a second jar with newly formed baby SCOBY's.
