Great sugar alternative
I bought this because I love maple syrup for it’s low glycemic properties. Meaning I can sweeten anything without a spike in insulin/blood sugar problems. Overall, this makes for a healthy alternative for anyone looking out for cellular metabolism.It tastes great and is versatile. I understand why it is pricey, as it takes a large volume of syrup to create. The tradeoff is better outcomes in your body.

BEST sugar alternative!
To give you some history - I'm an active, healthy eater, not overweight person. When my routine labs showed my blood sugar in the red zone of super high my physician told me I HAD to bring my sugar down to normal or be on my way to diabetes.Coffee is my morning zen, and as a good Swede, I like it sweet, so my hunt began to find a substitute. I tried everything. Everyone's body is different: mind does not like "fake" sugar or sugar compounds. So, after creating a biological nightmare in my gut - I tried maple sugar.I know what you're thinking...ewwww coffee that tastes like maple syrup! But what I discovered was absolutely amazing. NO maple syrup taste. In sugar form the taste is neutral taste to your coffee (or other foods) without the high glycemic response.Within 6 months my blood sugar was normal, and my sugar cravings are gone. My weight is more stable and I am loving every cup of coffee I drink. When I am somewhere and don't have maple sugar avaiable, I've found that I use over 50% less sugar. I also read every lable for sugars....(glucose, sucrose, high fructose corn syrup...and more).Get a small container and try Nova Maple Sugar!! Hope you enjoy it as much as I.Understand: it takes a LOT of maplle syrup (sap) to create a sugar so you are going to pay more for this product. You may have to use more of it. However, consider the cost of other sweeteners or the cost to your health (diabetes). It's worth every dollar.

Best substitute for white sugar
I used this as a substitute for white sugar in gluten free oatmeal cookies. I know it’s still sugar but one with a lower glycemic index. Gave the cookies a great flavor and creamed beautifully with the butter since it’s much finer than granulated white sugar.

Flavorful!
I love this stuff. It can be used in a variety of dishes and the larger bottle lasts a really long time! I will always have this in my pantry!Very good flavor and quality. I make nearly all of our meals from scratch, from breakfast to dinner, and this maple sugar can be used on a lot of things, even in places you wouldn't normally expect it.Maple sugar covered bacon BLTs are a hit around here!

Really great except…
This sugar tastes fabulous, is ultra fine, and wonderful to work with EXCEPT of you are using it for meringue, divinity, etc. it totally deflates the egg whites. Every time I’ve tried, I’ve been disappointed. The egg whites will get to soft peaks, working to stiff peaks just fine until I slowly add the maple sugar. I guess I’ll have to stick with the grainier maple sugar from the local coop when making airy egg white based desserts.

This is amazing
This maple sugar is fresh, tasty and easy to work with. I wanted to try a different brand and I am very glad I did. It's better than white sugar and as soft as brown sugar but with a better flavor. I am very pleased with this product and will be buying again.

WHAT HAVE I DONEbuying this has been the best idea ever. I researched about maple syrup because I love trying cane sugar alternatives for baking. Let me tell you why this is a gift from the gods.You can look up the nutritional benefits on your own. For a sugar, it's substantially better for you than cane sugar.Texturally it will bake like light brown sugar. Without heat, it dissolves into beverages and fats faster than sugar.Its a little sweeter than regular sugar so maybe .8 to 1 ratio.I've tried a couple of different brands and I get the least amount of clumping with this one. Also store as airtight as possible and don't refrigerate, that will create condensation when you pull it out of the fridge.NOW FOR FLAVOR.Imagine if caramel and brown sugar had a baby and the godfather was a nutty vanilla. It's almost a shame to bake it into a very flavorful recipe; I use it for neutral cakes and cookies to let this flavor (which is very delicate) stand out. If you do bake it into something with fruit, you'd never know it's not brown sugar.It's the secret to my marinara sauce.It pairs so well with chocolate and coffee. So well. It brings tears of joy to my eyes.I take a homemade latte with me to work in the mornings and let me tell you something about using maple sugar in that coffee. Let me tell you the magic that happens when this gets frothed into milk.It tastes like angel baristas came down from heaven and poured this toasty wonderful granular blessing into my cup with a golden spoon.
