Fresh, tasty, numbing, but with some seeds.
These are the first Szechuan peppercorns I've ever bought, so I don't have a lot to compare them to. Here's my experience. They're very attractive and fresh-looking. They smell great when the bag is opened, very unique. The packaging is also attractive and reseals well.As other reviews mentioned, there are a fair number of seeds still in here. Sometimes that matters and sometimes not. I have used them as a spice in a jar of pickles, and in that sort of use (where they are a flavoring but not actually consumed), the seeds don't seem to matter a bit. However, if they're going to be ground up or used as an ingredient in a dish where they will be eaten along with the food, taking the seeds out is not difficult but can be time consuming. I de-seeded a heaping teaspoon of them, and it probably took me 5 minutes or so.They certainly give you that numb tingle! My best description is kind of a metallic buzzing numbness. The description of touching a battery to your tongue is not far off. As an ingredient in a jar of pickled okra I made, they give an interesting flavor, and the numbing creeps up on you after a couple bites. I find it a pleasant and interesting layer of the taste/texture experience.Overall, these seem to be very good quality. After receiving them, I found one of my local Asian markets carries a different brand, but I haven't bought any to compare. If you primarily use them in recipes where they are ground or consumed, you may want to shell out a little more for the ones that are supposed to have fewer seeds. I understand eating the seeds is unpleasant.

I found that these are fresher/more potent than product I have used previously, from various sources.It has been necessary to reduce the amount used in various recipes to avoid an uncomfortable amount of numbing.That said, these are fragrant and add that desired flavor many Szechuan dishes call for.Excellent product.

Very flavorful; essential for adding a unique kick to every dish
I can still recall a vague childhood memory of going to the local Asian supermarket and stocking up on the latest Chinese herbs and spices not sold elsewhere in my area. One of these was hua jiao (Sichuan peppercorn), and out of the countless, seemingly endless varieties of spices and herbs we bought, only hua jiao stood out in my mind. I used to relish the opportunity to add it to every dish whenever I could; unable to resist the numbing potency and delightfully strong citrus-like flavor, and once our meager 2 oz supply ran out, all other food seemed lacking.Now, many, many years later, I am pleasantly surprised and impressed to discover that it is available online at a somewhat reasonable price, and at a much better quality than that I used to remember. A strong wave of nostalgia instantly hit me the moment I opened the bag, and I didn't hesitate to add a pinch, or a generous amount to spice up everything from improvised ground turkey noodles with napa and tomatoes, to fried rice and even lasagna.My first package lasted 6 months, and unfortunately, when I ordered my second bag, it arrived with a puncture wound in the back of the packaging. This broke the vacuum seal, and exposed the delicate spice inside to the open air for who knows how long, diminishing much of the flavor and potency. Fortunately, Amazon was quick to issue a replacement, and it came with no quality issues. Overall, while I believe the price could be lowered, I have been unable to find a better source of Sichuan peppercorn at such good quality, and a somewhat palatable price point. Would recommend.

Wonderful aroma!
First time ordering these peppercorns and I was pleasantly surprised how different they are. They have a very distinct smell and flavor. A little smaller than a regular peppercorn and pinkish red in color. The aroma when ground is wonderful. The bag is designed to keep them fresh and self sealing. Definitely will buy again.

Got these to make Lao Gan Ma style Chili Crisp.My understanding is Sichuan peppercorns aren't known for their heat, they are more known for the numbing effect.These have a really wonderful fragrance .And, I am going to need to dial them back in my Chili Crisp recipe because they have abundant numbness!!!Very impressed!
