Great for freezing baby food portions and for baking
I tested this item for two purposes. First, I want to be able to freeze homemade baby food in it, and second, I'd like to bake with it.I have not had time to make baby food, but I did fill each muffin cup with water and freeze it to see how much each section could hold without overflowing and how easy it would be to get the frozen discs out of the pan. This went very well. I filled some sections with 1.5 tablespoons (leaving a little room for expansion when the freeze happened) and I filled others to the brim with 2 full table spoons to see what would happen when frozen. Not even the 2 tablespoon sections overflowed when freezing (I think because the silicone can stretch and expand a bit), which tells me this will be very convenient to be able to freeze and thaw food in 1 ounce (i.e. 2 tablespoon) increments.The frozen discs also came out of the pan nicely. I twisted the pan a bit (like you would do with an ice cube tray), and some came out right away. The few slightly more stubborn ones easily popped out when pressed from the underside thanks to the flexible silicone. I should also note that the interior of each cup is a very smooth, almost shiny silicone finish, which I think makes it easy to pop out the frozen discs. Now, this was a test with water and not food, but since most baby food is going to have a very high water content, I think this is a fair test.I did also bake some gluten free blueberry muffins in these as well. I used a Jules brand mix that I had not used before. I had pre washed this pan in the dishwasher, and also sprayed it with non-stick cooking spray as directed before use. A medium sized cookie scoop is just the right size to scoop up batter to fill these mini muffin cups. I placed the silicone pan on a metal cookie sheet to bake (taking a hot, flexible silicone pan in and out of a hot oven can be tricky, and the cookie sheet gives you something solid to hold on to). The metal cookie sheet I used was just big enough so that the rim of cookie sheet perfectly surrounded the pan. In hindsight, I would recommend using a cookie sheet slightly bigger than the silicone muffin pan so that there can be more airflow/even heating between the individual muffins.Due to a few mistakes of my own doing (such as the cookie sheet issue mentioned above and me setting the temperature according to the convection baking instructions while absentmindedly using my upper oven which is not convection), I had a few muffins that were underdone. But, like I said, I think that was my own fault. Most of the muffins, despite my mistakes, turned out fine.They came out of the muffin pan with no sticking and were nicely shaped. Of course there was a little muffin residue left in each cup, but that cleaned up very easily. Due to a full dishwasher, I washed in the sink, and this cleaned up perfectly (with the help of a rounded brush to get in each cup) with very little effort. I did put this through the dishwasher before baking, and I think it would clean up well in the dishwasher after baking if you correctly position it so that the cups get adequate exposure to the spray jets.I like being able to make muffins without having to use the papers. This worked very well for me and am very pleased with this pan for both baking and freezing small portions of food.

A must-have for every person who bakes!
Wonderful, wonderful product! What I love most about this silicon pan is that it's much safer cookware compared to my old non-stick muffin pans! I don't have to worry about scratches on the non-stick coating and the potential risk of inhaling toxic particles when that non-stick pan gets too hot (one can read some pretty scary stuff on Environmental Working Group.org site about Teflon-coated pans!).Another thing I just love about this pan- no more paper muffin liners - I was just too worried to pour the mix right in the tin before, because of possible scratches I could not see and also, too much trouble to wash the pan afterwards if I did not use the liners! Just spray the silicon pan slightly with non-stick spray before each use and the muffins just come sliding right off the pan! And washing is just a breeze- nothing that needs to be scrubbed and that oily residue from the spray washes right off with some hot water and soap ( I prefer to hand-wash the pan). I love it so, so much, I bought both - the regular muffin size and the mini-muffin one! So glad with this purchase- if you bake muffins, you should get this pan!One last thing I forgot to mention- I got some muffin recipes via e-mail by the seller to add to my baking collection. Tips for use.
Our daughter has lots of allergies and we need to bake her treats with unusual ingredients. I became very frustrated with our regular non-stick muffin and mini muffin pans for they ruined her egg based desserts. I ordered one silicone pan and it worked so well that I have since ordered three more, two regular sized and two mini sized total. We frequently bake large batches so that we have leftovers for all our little ones. They are well worth it, I have not had to dig a single muffin out with a spoon yet. Here are a few tricks I found that helped me:1. Do oil it lightly each time, especially with egg based batters.2. An ice cream scoop works great for portioning small amounts of batter.3. If you bake it on a cookie tray as opposed to a cooling rack, the bottoms will brown more, adding additional flavor.4. Take them out of the pan as soon as you can, otherwise the sides will get mushy as they cool.I also freeze beaten raw eggs in the regular sized one when our free range hens produce extra in the summer and it is quite easy to pop the eggs out of the pan to transfer to a zip lock Baggie. I was quite skeptical about these when I ordered them but ended up very pleased with this purchase.

I bought the 12 muffin pan recently. The company emailed me with several nice muffin recipes. Then asked if I would accept a 24 mini muffin pan for free and write a review. Why not? I have never made mini muffins before but was willing to try. I used a recipe I knew well for regular sized muffins. I sprayed the muffin pan with Bakers Joy on half and brushed oil on the other half. I baked them for the same time as I would regular muffins.The results were great. I could not believe how easily they released from the pan. I put a rack over the muffin pan, flipped it and ALL of them popped out on the rack perfectly formed. Didn't seem to matter as to the oil or the spray. I only put a very tiny amount of spray in each one- just on the bottom. Didn't need to oil the sides. The pan got some burned batter on some areas. All came out completely in the dishwasher. I look forward to using the 12 muffin pan. I am throwing out those paper liners that I hated. Thank you Grazia.
