I have tried a number of Reggiano Parmigiana. I find the Vacche Rossa Parmigiana holds the top rank for overall best. I think 24-36month Reggiano Parmigiana is a close 2nd. I use these for grating over food, mixing into sauces, and grinding the rind up for bolognese sauce. I don’t like the taste of less than 24month aged and more than 36months aged is too strong for me as I don’t prefer to eat it by itself. the Vacche Rossa Parmigiana has a smooth, less salty, and more umami taste to me. The best of the best.

After discovering this brand in Italy I became absolutely spoiled and demand only the best. I am so thankful I can buy this parm back home now!

The red cow cheese is lactose free. The 24 month was excellent.

Bellissimo. Aside from a glitch in the packaging which caused no harm to the product vac-sealed package, I have to say that my wife and I, keeping it clean, figuratively received an oral climactic experience.

If you love to cook and use ‘parmesan’, this is the best Parmigiano Reggiano available.Period.

Parm is a hard topic to talk about much less rate. Everyone has their own taste and so many people just buy whatever is at the supermarket (please don't do that). For myself, this parm came quickly, arrived as advertised and was well priced. I have no complaints. Having said that (again, just my opinion) it is a little more salty than I like (just to level set, not nearly as salty as the Locatelli that is available everywhere) and not quite as 'fruity' as I like. I find myself preferring the brown cow Parmigiano, but (for a third time) just my opinion.
