Q: Good for both oil paints and acrylics?

Yes. While I only paint with acrylics, there is nothing stated on the product which prohibits oils. In fact, there is a color guide on the inside front cover which indicates a few certain hues are acrylic only so I must assume this is safe to use with either medium. Good luck!

Q: Is the paper glued to the pad on 2 sides or just 1?

The pad of Gray Matters paper palette sheets are exactly that: a pad of papers. Just like a legal pad, they are attached at the top and easily tear out when you're finished with them. I've used them for many years and appreciate the product. Easy on the eyes and hardy enough to endure palette knife mixing.
