I will be opening west coast oysters like k-bay and those from se alaska (jinhi). any suggestions on the best blade style?

What's the difference in each 5 options? Boston, Galveston etc.

Are these blades intended to be sharpened right out of the box? I noticed it's about as dull as a flathead screwdriver.
