Recently, the NY Times had a recipe for Fregola with Calamari and I really wanted to try it. No luck finding fregola in my local markets so Amazon saved the day (again!). This Sardinian "couscous" has an entirely different consistency and taste from the Mideastern (including Israeli) varieties. My grandson won't eat those but he did eat the fregola. I've used it for other dishes, like one mixed with mushrooms, bacon and marscarpone. All delicious. This is expensive but a little goes a long way.

Delicious and exactly what I wanted
We had tried fregola in a monthly subscription box and wanted to make it again. I couldn't find it in any stores around here. This is exactly what it is and it is also very good!

Super to use in soups.........
I use this in veggie and chicken soups or broths. The texture is great and can be used with rice or quinoa. Will order again.
