How difficult is it to get a key off to give someone on the spot? Is this something you need to sit at a table with tools and commit to?

The short answer is YES, it is super easy to take out a key (or put a new one in)

If I have 3 keys, would this work with 3? I mean, an odd number of keys?

Hi,
Thank you for taking the time to write this question 
The short answer is YES!
In the kit, you will receive 4 posts (different length)

The short can hold up to 4 keys
The next can hold up to 6 keys
Another can hold up to 8 keys
And the longest can hold up to 12 keys

you can always add accessories such as the bottle opener (included) or simply add more spacers (the black round washers).
 
But please remember that no matter what you must make sure the post is completely covered before locking everything up.

The total number of keys depends on the type of keys you will put on the Clips mini key organizer
Clips mini can hold up to 12 regular metal keys.
