Q: does it measure ambient temperature?

Read the description only. Yes it does measure ambient temperature.

Q: Can i turn off the auto off function. It gets on nerves if someone is thinking he need to tell me how long i may use/see the measured temperature....

You can probably hold the trigger down with a rubber band if you need to defeat the auto-off feature.

Q: Will other brand k type probes work on this unit?

Sorry. I have no knowledge regarding the probes.
