Best meat knife I have
This knife is one of the best that I’ve ever ownedAnd I own a lot of them just did a deer with it. It’s very light at came very Sharp is very flexible and it’s well balanced great knife.

Nice little knife, only thing is, I still need to use it with a Deba
I gave "stretch" 3 stars cause I dont know what that means. Anyway, I used this for the first time yesterday on the fishing pier and used it today on my first flounder fillet. The knife is beautiful and is razor sharp but it does have a lot of bend to it, being both good and bad. On the pier, was looking to just "clean the fish". I found it very hard to disconnect the gills and to slice through the breast (rib cage area) of the fish due to the flex and "flimsy" feeling of the knife. Of course the soft tissue below it to remove the guts was no problem to slice through. I had to keep switching back and forth with my deba knife so this knife is definitely not a "1 knife does it all" type of knife. For that, I think the chef knife would be significantly better. Anyway, today I filleted a flounder. Worked flawlessly. Be advised I'm more used to filleting with a chef knife, but i did like the results with this flexible fillet knife. I am also far less concerned about "chipping" the knife, due to the flex and significantly less harder steel. Removing skin is far easier with this knife than the chef knife. I'm sorry, cant compare with other fillet knives, this is the first dedicated fillet knife I've owned, but I have to say, I do like it and proud of it being a Shun.

The knife is amazing! It’s my go to for trimming beef tenderloins only flaw which is a huge bummer is how fragile it is, a week into using it and it took a fall and the tip broke off, second one it has happened to, expensive to replace sadly going to look for alternative for work

I like sharp steel
Yes!! This knife works for me. It fillets and doubles as a chief knife while in the woods, on the road and in a kayak or backpacking. I like sharp steel. The blade is sharp and easy to sharpen with the right sharpener. BEWARE! It is thin and flexible, the tip can get bent easily. Buy or make a blade guard!! Money well spent. Any foodie that can handle a knife can adapt to this one. The knife is very light and fast! Nice balance. I would not use it as a boning knife on beef, elk, deer, hog, you get the idea. Any edged piece of steel has its limits, one blade or edge can't do everything!!

Flexible Boning Knife
The flexibility and sharpness of this knife exceeded my expectations. It slides through fish with no resistance. It has an impressive flexibility. I have yet to attempt to sharpen it, like most Shun knives they have a curious sharpening angle - but so far this is excellent and blends right in with the rest of my Shun Classic collection.

Blade discolored/rusted within months.
The blade doesn’t seem to be the same as my other 14 shun knives. Gives appearance of being a fake.
