delicious, prebiotic, alkaline forming, high fiber snack
These things are amazing. Here are the best benefits, IMO:- Prebiotic, so they feed the good gut bacteria. I've read that this is more effective than trying to add gut bacteria through probiotics; it's easier to feed bacteria that is already there and enable the population to grow than to try to colonize an already crowded space with new bacteria.- Excellent amount of fiber - 1 oz, 10 grams. Definitely seems to have a good effect on food moving through the system (don't want to get graphic here).- Alkaline forming, so good for avoiding cavities. I often wake up in the middle of the night hungry. You can't eat anything with sugar or anything that would stick to your teeth, because you don't really want to have to get up and brush. A couple of these makes the hunger go away but don't make your mouth acidic. I eat them right after each meal to get back to an alkaline environment immediately, until I can brush.- Taste slightly sweet but very little sugar. If you like coconut you will like these.Now after the burst of flavor there is definitely the fiber left to chew, and there is more than that than of flavor. So you have to be prepared for that. But the fiber is so good for you that I don't mind it. They are very chewy for sure. One very strange and interesting thing - if you soak them in water, they become CRUNCHY. I think they lose flavor, though, so I don't do this. You can use a few to flavor the water, however.If you have trouble with the amount and taste of the fiber, you can also buy the peeled ones and eat one of each at a time, or you can mix with some nice crunchy coconut slices. Coconut is also alkaline forming, of course.Basically they're perfect. I'm extremely happy my sister told me about them.

Rather sweet and delicious — perhaps another reason our ancestors preferred them to other plant parts. People say they taste a bit like coconut, almond, or granola, though really, they have their own unique taste. You’ll probably like their taste; they’re one of the best-tasting ‘super-healthy’ foods. But their texture may throw you. They start off chewy but for the last few chews they will be a bit gritty. Some people mistake this for a defect, but that’s just the way tigernuts are. I don’t mind it at all. At any rate, soaking them overnight in water will soften them and make their texture much more familiar to the American palate. My suggestion is to be adventurous, try them for yourself, and see how you feel about them. You’ll be making your body very happy.

Tigernuts are awesome raw or in horchata & tortillas
I purchased a 5oz bag of tigernuts and was grossed out to find maggots and cocoons-in-progress in the bag. I requested a replacement and I'm glad I gave tigernuts a second chance. The new bag was from the same production lot, but it was completely clean.I washed and soaked the entire 5 oz bag (~approx 1 cup) of tigernuts for 24 hours. I tasted the tiny tubers and was delighted by the crisp, slightly sweet flavor and texture resembling that of water chestnuts.After blending 1 cup of tigernuts with 4 cups of water, I strained them and got a subtly sweet liquid that was creamier than nut milks. Added some cinnamon and maple syrup and got a horchata more deliciously robust than the watery rice horchatas usually found in Mexican taquerias. Unlike nut milks, tigernut milk doesn't separate when left overnight in the fridge.Don't throw away the tigernut meal left over from the horchata! Not only because tigernuts are expensive, but also because it is like semi-hydrated tigernut flour and can be used for cooking. I mixed the coconuty tigernut meal with cassava flour, sweet potato flour, water, avocado oil, and sea salt for delicious, fiber-rich tortillas.I made three flavors of tortillas: I added fresh chopped chives and sesame oil for tortillas resembling chinese chive pancakes, cinnamon and coconut sugar for sweeter tortillas, and rosemary for a subtle herb flavor. These are now my favorite tortilla recipes!I got a lot out of a small 5oz bag of tigernuts. I was thinking of stocking up on the 3-pack of the 12oz bags, but you don't get a better deal for buying more.
