Great for Paleo baking. Here's how I use it:
This is an excellent solution for grain-free baking. However it is expensive. To compensate for the price, I mix this with other flours as follows: 1 part tigernut flour,1 part coconut or almond flour and 4 parts cassava flour. If you want to make it even lighter, you can also add 1 part tapioca flour. Here's why I recommend this product: if you use my recipe, you'll spend less money, but the tigernut flour is what makes it work. I tried grain free baking for the Autoimmune Protocol without tigernut flour and my food simply didn't turn out. Everything had the texture of glue and baked about as well. So adding the tigernut flour changed that. So did using plantains rather than flour as the base for my baked goods. Both discoveries made grain-free baking possible. Another essential element is cream of tartar. Mix one part baking soda to 2 parts cream of tartar to make Paleo baking powder. If you leave out the cream of tartar, your product will taste like baking soda. I realize I've said more about Paleo baking than that product but this brand is excellent and the result is that my food is better with it than without it. So I recommend this product.

Tastes great Easy to use
This is the best tiger nut flour out there. I use it to make tiger nut butter, cookies, tortillas and much more.

Good flour alternative.
It makes food a little fiberous, but it works well and it's a great complex starch for gluten-free/grain-free/nut-free diets.

Bakes up light and fluffy
This "root vegetable" flour bakes up beautifully fluffy in waffles or pancakes with an awesome flavor very similar to buckwheat. Combine with monk fruit sweetener and you can achieve flavorful low carb/no grain baked goods

Good value
Buying the 2-pack was a better value than purchasing singly at my local health food store. Moisture content of the flour was just right and product smelled fresh when opened. Tigernut flour makes great gluten free cookies :)

Coarse flour
The first time I ordered this flour, it was great. It had the fine consistency of regular flours. The next couple of orders the flour was much more coarse in texture...to the point that I would call it mealy. Not exactly what someone who has to be grain-free for health reasons is looking for to mimic the foods they can no longer have. I really liked this product at first, but it required too much sifting to filter out the mealy part, which then had to be wasted.

WONDERFUL product! I use the flour to make "tigernut butter" since I cannot have any nut butters. 2 cups of tigernut flour + 1/4 cup and 2 tbsp coconut oil (I add cinnamon or carob powder to mine too), mix in food processor. Store in a glass container. YUM!
